Beekeeping is hard work, especially when you wear a bee suit during the hot Carolina summers. It also requires a lot of knowledge. There is SO much to learn and experience before you can be successful at this joint venture between man and bee. So, if you just want delicious honey (which was the first intrigue into having hives), you likely won’t stick with it for long. It would be far better to “make friends with a beekeeper,” as Adrian the Bee Man suggests. 

But, bees ARE fascinating. Fascinating doesn’t even seem like a strong enough word. Their methods of communication, the precision of their work, the contribution they make to the world, and even just the way they come and go from the hive laden down with pollen can keep your attention for hours. 

There is also something wonderful about creating a product that is as unique as your family and your farm. When we taste the honey from our bees, we feel so proud that we’ve provided them with the space and raw ingredients to create such a delicious food – an apple orchard abundant with spring blossoms, red and white clover, honeysuckles, wild berry bushes, garden herbs and annuals, tulip trees, maples and chestnuts – we feel like we can taste it all in every spoonful.  – Amy Haley

Honey Curried Chicken

In a greased 9×13 pan, arrange 3 lbs of boneless chicken breasts in a single layer. 
 
Combine in another bowl:
1/3 cup melted butter
1/3 cup Haley Quality Honey
1/4 cup dijon mustard
4 tsp curry powder
Pinch of black pepper
 
Stir together until smooth. Pour over chicken. Bake chicken uncovered for 20 minutes in a 375 degree oven, basting once. 
Turn chicken over, baste again. Bake another 20 minutes. Baste. 
 
Serve on a bed of rice. (Serves 4)

Honey Flan

4 eggs
1 can sweetened condensed milk
1 can evaporated milk
4 oz regular cream cheese
1 tsp vanilla
1/2 cup granulated sugar
3 Tbsp Haley Quality Honey
 
Preheat oven to 350 degrees. 
Sprinkle sugar into bottom of 3 qt saucepan, cook over medium heat and gentle shake the pan until the sugar melts and turns a light golden brown. Slowly stir in 3 Tbsp honey. Remove from heat when the honey and sugar are well combined. Immediately pour into a 10” cake pan. 
Combine the remaining ingredients in a blender until smooth. Pour the blender mixture over the sugar and honey in the cake pan. 
Place the pan in a water bath of boiling water that reaches half way up the pan. 
Bake at 350 degrees until a toothpick placed in the center comes out clean (about 40 minutes). 
Cool and then refrigerate for 3 hours. 
Run a knife around the edge to loosen and then invert onto a pan. 
Serve cold.

Healthy Raspberry 3 Grain Muffins

1/2 cup rolled oats
1 cup milk
3/4 cup plain flour
1/2 cup cornmeal (preferably stone ground)
1/4 cup wheat bran
1 tsp baking powder
1/4 tsp salt
1/2 cup Haley Quality Honey
3 1/2 Tbsp oil
2 tsp grated lime zest
1 egg, lightly beaten
2/3 cup raspberry
 
Preheat over to 400 degrees
In a large microwave safe bowl, combine oats and milk. Microwave on high until oats are creamy and tender (3 minutes). Set aside. 
Mix ingredients together – gently fold in raspberries. 
Bake for 16 minutes. (serves 12)
